Description

A traditional Brazilian cake with a modern twist featuring a rich chocolate base, brigadeiro filling, and a velvety white chocolate drip.

  • 0.75 cup Unsweetened Cocoa Powder
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
  • 2 Large Eggs
  • 1.75 cups Granulated Sugar
  • 0.5 cup Vegetable Oil
  • 1 cup Whole Milk
  • 1 teaspoon Vanilla Extract
  • 0.5 cup Hot Coffee
  • 2 cans (14 oz each) Sweetened Condensed Milk
  • 4 tablespoons Unsweetened Cocoa Powder
  • 2 tablespoons Unsalted Butter
  • 0.5 cup Heavy Cream
  • 1 teaspoon Vanilla Extract
  • 5 oz White Chocolate (finely chopped)
  • 0.25 cup Heavy Cream
  • 1 can (14 oz) Sweetened Condensed Milk
  • 2 tablespoons Cocoa Powder
  • 1 tablespoon Butter
  • Chocolate Sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
  2. Whisk the dry ingredients together. Beat the eggs and sugar until light and fluffy, then mix in the oil, milk, and vanilla.
  3. Fold the dry mix into the wet ingredients, stir in the hot coffee, and pour into the pan.
  4. Bake for 35-40 minutes until a toothpick comes out clean. Cool completely and slice horizontally into two even layers.
  5. Combine the 2 cans of condensed milk, 4 tablespoons of cocoa powder, 2 tablespoons of butter, and 0.5 cup of heavy cream in a saucepan over medium-low heat.
  6. Stir constantly for 12-15 minutes until the mixture thickens, then stir in the vanilla and let it cool.
  7. Cook the remaining condensed milk, cocoa powder, and butter until it forms a thick paste.
  8. Roll small portions into balls and coat with chocolate sprinkles.
  9. Assemble the cake layers: spread half of the brigadeiro frosting on the first layer, place the second layer on top, and coat the entire cake with remaining frosting.
  10. Heat 0.25 cup of heavy cream, pour it over the white chocolate, and stir until smooth.
  11. Drizzle the ganache around the edges of the cake and swirl with melted dark chocolate.
  12. Refrigerate for 1 hour to set.

Notes

For best taste and texture, let slices sit at room temperature for 15-20 minutes before enjoying.
