- 2 Large Eggs
- 1.75 cups Granulated Sugar
- 0.5 cup Vegetable Oil
- 1 cup Whole Milk
- 1 teaspoon Vanilla Extract
- 0.5 cup Hot Coffee
- 2 cans (14 oz each) Sweetened Condensed Milk
- 4 tablespoons Unsweetened Cocoa Powder
- 2 tablespoons Unsalted Butter
- 0.5 cup Heavy Cream
- 1 teaspoon Vanilla Extract
- 5 oz White Chocolate (finely chopped)
- 0.25 cup Heavy Cream
- 1 can (14 oz) Sweetened Condensed Milk
- 2 tablespoons Cocoa Powder
- 1 tablespoon Butter
- Chocolate Sprinkles
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
- Whisk the dry ingredients together. Beat the eggs and sugar until light and fluffy, then mix in the oil, milk, and vanilla.
- Fold the dry mix into the wet ingredients, stir in the hot coffee, and pour into the pan.
- Bake for 35-40 minutes until a toothpick comes out clean. Cool completely and slice horizontally into two even layers.
- Combine the 2 cans of condensed milk, 4 tablespoons of cocoa powder, 2 tablespoons of butter, and 0.5 cup of heavy cream in a saucepan over medium-low heat.
- Stir constantly for 12-15 minutes until the mixture thickens, then stir in the vanilla and let it cool.
- Cook the remaining condensed milk, cocoa powder, and butter until it forms a thick paste.
- Roll small portions into balls and coat with chocolate sprinkles.
- Assemble the cake layers: spread half of the brigadeiro frosting on the first layer, place the second layer on top, and coat the entire cake with remaining frosting.
- Heat 0.25 cup of heavy cream, pour it over the white chocolate, and stir until smooth.
- Drizzle the ganache around the edges of the cake and swirl with melted dark chocolate.
- Refrigerate for 1 hour to set.
