Description
A delightful dessert that beautifully blends zesty blueberry cream, coffee-soaked ladyfingers, and a hint of lemon, offering a fresh twist to a classic tiramisu.
Ingredients
Scale
- 2 packages crisp ladyfingers, about 14 oz total (400 g)
- 1 cup blueberry juice or blueberry nectar (240 ml)
- 2 tablespoons fresh lemon juice (30 ml)
- 16 oz mascarpone cheese, cold (454 g)
- 2 cups heavy whipping cream, very cold (480 ml)
- 3/4 cup powdered sugar (90 g)
- 2 teaspoons vanilla extract
- 1 teaspoon finely grated lemon zest
- Pinch of salt
- 4 cups fresh or frozen blueberries (600 g)
- 3/4 cup granulated sugar (150 g)
- 2 tablespoons fresh lemon juice (30 ml)
- 1 teaspoon finely grated lemon zest
- 2 tablespoons cornstarch (16 g)
- 3 tablespoons cold water (45 ml)
- Pinch of salt
- 1 cup fresh blueberries (150 g)
- Fresh mint leaves
Instructions
- Begin by preparing the blueberry topping. In a saucepan, combine the blueberries, granulated sugar, lemon juice, lemon zest, and salt, then cook over medium heat until the blueberries are soft and start to release their juices.
- In a small bowl, create a cornstarch slurry by mixing cornstarch with cold water. Slowly add this to the blueberry mixture, stirring continuously until it thickens to desired consistency. Once done, remove from heat and let it cool completely.
- Next, prepare the mascarpone cream. Use a mixer to beat the heavy whipping cream until soft peaks form. Add powdered sugar, vanilla extract, lemon zest, and a pinch of salt into the whipped cream and mix until well combined.
- In another bowl, soften the mascarpone cheese until smooth, then gently fold in the whipped cream mixture until no streaks remain.
- To assemble, dip ladyfingers into a mixture of blueberry juice and lemon juice, ensuring they soak briefly. Arrange a layer of soaked ladyfingers in a dish.
- Spoon half of the mascarpone cream over the ladyfingers, followed by half of the blueberry topping. Repeat the layers, ending with the remaining blueberry topping.
- Refrigerate for at least 360 minutes to allow the flavors to meld and the dessert to set.
- Just before serving, garnish your tiramisu with fresh blueberries and mint leaves for a touch of elegance.
Notes
