- 1 cup blackberries
- 1 cup heavy cream
- ½ cup sugar
- 2 teaspoons vanilla bean paste
- 2 teaspoons gelatin powder
- 3 tablespoons cold water
- 1 cup berry puree (made from blackberries)
- Chocolate cake base (optional)
Instructions
- Start by preparing your berry puree. In a blender, blend 1 cup of blackberries until smooth. Strain to remove seeds and set aside.
- In a small bowl, sprinkle the gelatin over cold water and let it bloom for about 5 minutes.
- In a saucepan, heat the heavy cream and sugar over medium heat until it begins to simmer. Remove from heat and stir in the vanilla bean paste and bloomed gelatin until fully dissolved.
- Let the mixture cool slightly, then fold in the berry puree and blackberries until well combined.
- If using a chocolate cake base, place it in your desired cake pan. Pour the mousse mixture over the cake, smoothing it out evenly.
- Refrigerate the cake for at least 240 minutes or overnight until it’s set.
- Finally, prepare the dark berry mirror glaze as per your recipe and pour it over the set mousse cake before serving.
Notes
Serve with fresh blackberries, powdered sugar, mint, or whipped cream for an extra touch.
