- 3 large eggs
- 1/2 cup heavy cream
- 8 oz cream cheese
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 cup chocolate cookie crumbs
- 1/4 cup unsalted butter (melted)
- 1 cup cherries (fresh or canned)
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 325°F (160°C).
- Mix chocolate cookie crumbs with melted butter, then press firmly into the bottom of a springform pan.
- Beat the cream cheese until smooth. Gradually add in the granulated sugar and mix until combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the heavy cream, sour cream, and vanilla extract until well combined.
- Pour the cheesecake mixture over your prepared crust in the pan.
- Bake for about 50-60 minutes, or until the center is just set.
- Cool the cheesecake in the oven with the door slightly ajar, then refrigerate for at least 240 minutes to set.
- Top your cheesecake with cherries and a sprinkle of chocolate shavings before serving.
