Description

Ingredients

  • 3 large eggs
  • 1/2 cup heavy cream
  • 8 oz cream cheese
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup chocolate cookie crumbs
  • 1/4 cup unsalted butter (melted)
  • 1 cup cherries (fresh or canned)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix chocolate cookie crumbs with melted butter, then press firmly into the bottom of a springform pan.
  3. Beat the cream cheese until smooth. Gradually add in the granulated sugar and mix until combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the heavy cream, sour cream, and vanilla extract until well combined.
  6. Pour the cheesecake mixture over your prepared crust in the pan.
  7. Bake for about 50-60 minutes, or until the center is just set.
  8. Cool the cheesecake in the oven with the door slightly ajar, then refrigerate for at least 240 minutes to set.
  9. Top your cheesecake with cherries and a sprinkle of chocolate shavings before serving.
