Description

Savory and flavorful Mexican Birria Tacos filled with shredded beef and served with a rich consomé for dipping.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 onion, quartered
  • 4 garlic cloves
  • 3 dried ancho chiles, stems and seeds removed
  • 2 dried guajillo chiles, stems and seeds removed
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 cups beef broth
  • Salt and pepper to taste
  • Corn tortillas
  • Oaxacan cheese, shredded
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Combine the beef chuck, onion, garlic, dried chiles, cumin, oregano, and beef broth in a large pot. Season with salt and pepper to taste.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 120-180 minutes until the beef is tender and shreds easily.
  3. Remove the beef and shred it using two forks. Strain the liquid and reserve it as consomé for dipping.
  4. Heat a skillet and dip corn tortillas in the consomé; fill each tortilla with shredded beef and shredded Oaxacan cheese.
  5. Fold the tortillas and fry them in the skillet until they turn crispy and golden brown.
  6. Serve hot with a side of the reserved consomé for dipping, garnished with fresh cilantro and lime wedges.

Notes

For the best flavor, marinate the meat overnight and use a mix of chiles. Store leftovers properly for optimal flavor.
