Savory and flavorful Mexican Birria Tacos filled with shredded beef and served with a rich consomé for dipping.
Ingredients

- 2 lbs beef chuck, cut into chunks
- 1 onion, quartered
- 4 garlic cloves
- 3 dried ancho chiles, stems and seeds removed
- 2 dried guajillo chiles, stems and seeds removed
- 1 tsp cumin
- 1 tsp oregano
- 4 cups beef broth
- Salt and pepper to taste
- Corn tortillas
- Oaxacan cheese, shredded
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Combine the beef chuck, onion, garlic, dried chiles, cumin, oregano, and beef broth in a large pot. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 120-180 minutes until the beef is tender and shreds easily.
- Remove the beef and shred it using two forks. Strain the liquid and reserve it as consomé for dipping.
- Heat a skillet and dip corn tortillas in the consomé; fill each tortilla with shredded beef and shredded Oaxacan cheese.
- Fold the tortillas and fry them in the skillet until they turn crispy and golden brown.
- Serve hot with a side of the reserved consomé for dipping, garnished with fresh cilantro and lime wedges.
Notes
For the best flavor, marinate the meat overnight and use a mix of chiles. Store leftovers properly for optimal flavor.
