- 4 large egg yolks
- 1/2 cup granulated sugar
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup white granulated sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- Whisk together egg yolks and sugar until pale and creamy.
- Heat heavy cream in a saucepan until just simmering.
- Pour the hot cream slowly into the egg mixture, whisking continuously.
- Add vanilla extract and mix well.
- Strain the mixture into ramekins.
- Bake in a water bath for about 30-35 minutes, until set but not firm.
- Cool the ramekins and refrigerate for at least 2 hours.
- Sprinkle an even layer of sugar on top and caramelize with a blowtorch until golden brown.
- Serve immediately and enjoy!
Notes
For best results, use white granulated sugar for the topping to achieve a perfect caramelized crust.
