Ingredients

  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Grate the carrots using the finest setting. Drain the crushed pineapple to remove excess juice.
  3. Sift together the flour, baking soda, baking powder, salt, and spices in a large bowl.
  4. Beat the eggs and sugars in a separate bowl until combined. Gradually add the oil, mixing until smooth.
  5. Stir in the grated carrots, crushed pineapple, and nuts until evenly distributed.
  6. Combine the wet and dry ingredients gently until just combined, avoiding overmixing.
  7. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  9. Prepare the cream cheese frosting by beating 8 oz of cream cheese and 1/2 cup of unsalted butter until smooth. Gradually add 4 cups of powdered sugar and 1 teaspoon of vanilla extract, continuing to beat until fluffy.
  10. Assemble the cake layers, spreading frosting between each layer and over the top and sides of the cake.

Notes

For a decorative touch, add chopped nuts on top of the frosting or a sprinkle of cinnamon.
