- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup chopped walnuts or pecans
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 2 teaspoons vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Grate the carrots using the finest setting. Drain the crushed pineapple to remove excess juice.
- Sift together the flour, baking soda, baking powder, salt, and spices in a large bowl.
- Beat the eggs and sugars in a separate bowl until combined. Gradually add the oil, mixing until smooth.
- Stir in the grated carrots, crushed pineapple, and nuts until evenly distributed.
- Combine the wet and dry ingredients gently until just combined, avoiding overmixing.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- Prepare the cream cheese frosting by beating 8 oz of cream cheese and 1/2 cup of unsalted butter until smooth. Gradually add 4 cups of powdered sugar and 1 teaspoon of vanilla extract, continuing to beat until fluffy.
- Assemble the cake layers, spreading frosting between each layer and over the top and sides of the cake.
Notes
For a decorative touch, add chopped nuts on top of the frosting or a sprinkle of cinnamon.
