- 1.5 cups Graham cracker crumbs
- 0.333 cups Sugar
- 0.5 cups Unsalted butter, melted
- 16 oz Cream cheese, softened
- 1 cup Sugar
- 1 teaspoon Vanilla extract
- 3 Large eggs
- 1 cup Sour cream
- 0.25 cups All-purpose flour
- 2 cups Fresh strawberries, hulled and sliced
- 0.25 cups Sugar
- 1 tablespoon Lemon juice
Instructions
- Preheat your oven to 325°F (160°C). Prepare a 9-inch springform pan by greasing it lightly.
- Mix the Graham cracker crumbs and melted butter until well blended. Press this mixture into the bottom of the prepared pan to form the crust.
- Beat the cream cheese until smooth. Gradually add 1 cup of sugar and the vanilla extract.
- Add the eggs one at a time, mixing well after each addition. Then, fold in the sour cream and flour until just combined.
- Pour the cream cheese mixture over the crust in the pan.
- Bake for about 60 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for about 60 minutes.
- Prepare the strawberry sauce by combining the sliced strawberries, 0.25 cups of sugar, and lemon juice in a bowl. Let this mixture sit for about 30 minutes, allowing the strawberries to release their juices.
- Top the cooled cheesecake with the strawberry mixture. Refrigerate for at least 240 minutes or overnight for the best taste.
