Description

Deliciously spicy and crispy salmon bites paired with a creamy Bang Bang sauce, served over rice and vegetables.


Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) or your air fryer to 400°F (200°C). Line a baking sheet with parchment or spray the air fryer basket.
  2. Toss the salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Put the panko breadcrumbs in a shallow dish. Lightly brush or spray the salmon cubes with olive oil and press each piece into the panko so they get a good coating.
  4. Spread the coated salmon in a single layer. Bake for 10–12 minutes or air-fry for 8–10 minutes, until the panko is golden and the salmon flakes easily.
  5. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice for the Bang Bang sauce. Taste and adjust spices if desired.
  6. To assemble, divide the rice into bowls. Top with purple cabbage, shredded carrots, avocado slices, and green onions. Add the crispy salmon bites and drizzle with the Bang Bang sauce. Garnish with cilantro and sesame seeds.
