- 2 ripe bananas, mashed
- 1/4 cup honey or maple syrup
- 1/4 cup yogurt or applesauce
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Optional add-ins: nuts, chocolate chips, or dried fruit
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the mashed bananas, honey (or maple syrup), yogurt (or applesauce), and vanilla extract until well combined in a large bowl.
- Whisk together the whole wheat flour, baking soda, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Fold in any optional add-ins if desired.
- Divide the batter evenly among the muffin cups.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack. Enjoy!
