Description

These banana muffins are a fantastic treat for breakfast or snack time, made with ripe bananas for natural sweetness and moisture.


Ingredients

  • 1/4 cup honey or maple syrup
  • 1/4 cup yogurt or applesauce
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional add-ins: nuts, chocolate chips, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the mashed bananas, honey (or maple syrup), yogurt (or applesauce), and vanilla extract until well combined in a large bowl.
  3. Whisk together the whole wheat flour, baking soda, baking powder, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  5. Fold in any optional add-ins if desired.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
