Description

Ingredients

  • 2 cups chocolate cookie crumbs
  • 6 tbsp unsalted butter, melted
  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup caramel sauce, plus extra for topping
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup chopped pecans
  • Pinch of salt
  • Whipped cream, optional

Instructions

  1. Preheat your oven to 325°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Mix the chocolate cookie crumbs with melted butter until evenly coated. Press firmly into the bottom of the pan to create a thick crust.
  3. Beat the cream cheese until smooth and creamy. Add the sugar and continue mixing until fluffy.
  4. Add the eggs one at a time, mixing on low speed after each addition. Stir in vanilla extract, sour cream, and a pinch of salt.
  5. Fold in the chocolate chips and half of the chopped pecans. Pour half of the cheesecake filling into the crust.
  6. Drizzle caramel sauce over the top, then add the remaining filling. Bake for 55–65 minutes, or until the edges are set while the center still has a slight jiggle.
  7. Turn off the oven and crack the door open slightly. Let the Turtle Cheesecake cool slowly for 1 hour to help prevent cracks.
  8. Chill for at least 6 hours or overnight for the best thick, bakery-style texture.
  9. Before serving, drizzle generously with caramel sauce and melted chocolate, then sprinkle with the remaining pecans. Serve chilled with extra caramel for the ultimate gooey dessert experience.

Notes

Ensure cream cheese is softened for a smoother consistency. Allow cooling slowly to prevent cracks.
