Description

This delightful red berry tart features a crispy crust and rich mascarpone filling, adorned with fresh fruits, making it a beautiful and tasty dessert.

  • 1 prepared pie crust or sweet tart crust (pâte sablée)
  • Optional: powdered sugar for dusting
  • 8 oz (250g) mascarpone cheese
  • 3/4 cup (180ml) heavy whipping cream, very cold
  • 1/4 cup (60g) granulated sugar
  • 1 packet vanilla sugar or 1 tsp vanilla extract
  • 1 cup strawberries, sliced
  • 1 cup raspberries
  • 1/2 cup blueberries
  • Powdered sugar for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (180°C). Place the tart crust into a tart pan and prick the bottom with a fork. Bake for 18–20 minutes or until golden brown and crisp. Let it cool completely.
  2. Mix the mascarpone, sugar, and vanilla in a large bowl until smooth and creamy.
  3. Whip the cold heavy cream in a separate bowl until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until light, fluffy, and silky.
  4. Spread the mascarpone cream evenly into the cooled tart shell.
  5. Arrange the strawberries, raspberries, and blueberries generously over the top. Chill the Red Berry Tart for at least 1 hour before serving. Dust lightly with powdered sugar right before serving.

Notes

Use fresh, ripe berries for the best flavor. You can use frozen berries if fresh ones are unavailable. Make sure your heavy cream is very cold before whipping.
