- 3/4 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt in a medium bowl.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy in a large bowl.
- Beat in the egg, then mix in the molasses and vanilla extract.
- Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
- Fold in the white chocolate chips.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. You can freeze for longer storage.
