  • 1 pound boneless skinless chicken breasts, sliced into cutlets
  • Chopped parsley or basil, to taste (optional)

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Combine butter, olive oil, and garlic powder in a small bowl. Melt and whisk the mixture until smooth.
  3. Mix together panko breadcrumbs, parmesan cheese, Italian seasoning, salt, and pepper in a separate bowl.
  4. Slice the chicken breasts into thin cutlets so they cook evenly.
  5. Brush or dredge each cutlet in the melted butter and oil mixture, ensuring both sides are coated.
  6. Press each chicken piece into the parmesan-panko mixture, covering them completely.
  7. Place the coated cutlets on the prepared baking sheet and bake for about 20 minutes, turning them halfway through. The internal temperature should reach 165°F.
  8. Garnish with chopped parsley or basil, if desired, and serve!
