  • 1 cup Almond flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter (softened)
  • 1 cup Granulated sugar
  • 3 Large eggs
  • 1 teaspoon Vanilla extract
  • 1/4 cup Milk
  • 1 cup Heavy cream
  • 1/2 cup Apricot puree (made from fresh or canned apricots)
  • 1/4 cup Granulated sugar (for cream)
  • 1 teaspoon Gelatin
  • 2 tablespoons Cold water
  • 1 teaspoon Vanilla extract (for cream)
  • Sliced almonds (toasted) (for garnish)
  • Fresh apricot slices (for garnish)
  • Whipped cream (optional) (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. Mix the all-purpose flour, almond flour, baking powder, and salt together in a bowl.
  3. Beat the softened butter with granulated sugar in another large bowl until creamy.
  4. Add the eggs one at a time, followed by the vanilla extract and milk. Mix until well combined.
  5. Gradually add the dry mixture to the wet ingredients and stir until just combined.
  6. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Prepare the Bavarian cream while the cake is baking. In a small bowl, dissolve the gelatin in cold water and let it sit.
  8. Whip the heavy cream with the additional sugar and vanilla until peaks form.
  9. Melt the gelatin over low heat, then mix it with the apricot puree. Fold this mixture into the whipped cream gently.
  10. Once the cake is cool, layer the cream on top. Refrigerate for at least 240 minutes to set.
  11. Decorate with toasted almonds, fresh apricot slices, and whipped cream if desired.

Notes

Serve chilled, and consider pairing with chocolate sauce or whipped cream.
