  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) milk
  • 2 large apples (peeled and diced)
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • ½ cup (100g) brown sugar
  • 1 teaspoon cinnamon
  • 1 cup (120g) powdered sugar
  • 23 tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. Prepare the apples: Peel and dice the apples into small chunks. Toss them with sugar and cinnamon, then set them aside.
  2. Make the cake batter: Preheat your oven to 175°C (350°F) and grease a 9-inch baking pan. In a bowl, whisk together the flour, baking powder, salt, and cinnamon. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, followed by the vanilla extract. Then, alternate adding the dry ingredients and milk, mixing until just combined.
  3. Assemble the cake: Pour half of the batter into the prepared pan. Evenly scatter half of the diced apples over the batter, and sprinkle half of the brown sugar cinnamon mixture on top. Add the remaining batter, layer the rest of the apples, and swirl the remaining mixture on top gently with a knife.
  4. Bake: Place the cake in your preheated oven and bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool slightly before glazing.
  5. Make the glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle the glaze over the warm cake.

Notes

Use firm apples like Granny Smith or Honeycrisp for the best texture and flavor. Consider adding nuts for extra crunch.
