  • 2 (8-ounce) packages cream cheese, softened
  • ½ cup packed light brown sugar

  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • 3 Gala apples, peeled and diced
  • ¼ cup packed light brown sugar
  • ½ teaspoon cinnamon
  • ½ cup all-purpose flour
  • ½ cup quick oats
  • ½ cup packed light brown sugar
  • 2 teaspoons cinnamon
  • 4 tablespoons unsalted butter, melted
  • Caramel sauce (for serving)
  • Cool Whip (for serving)
  • Apple pie spice (for serving)

Instructions

  1. Preheat your oven to 350°F. Place a large sheet pan on the very bottom rack of the oven and fill it halfway with water. Line a 9-inch springform pan with parchment paper.
  2. Combine the cinnamon graham cracker crumbs, granulated sugar, and melted butter in a bowl. Stir until evenly coated and resembles wet sand. Press into the bottom of the prepared springform pan.
  3. Add the softened cream cheese and brown sugar to a large mixing bowl. Beat until smooth and creamy. Add the vanilla extract, cinnamon, and flour, mixing thoroughly.
  4. Incorporate the eggs into the cream cheese mixture, mixing until just combined.
  5. Pour the cheesecake filling over the crust, spreading it evenly. Set aside.
  6. Mix the diced Gala apples with brown sugar and cinnamon until coated.
  7. Combine flour, oats, brown sugar, cinnamon, and melted butter for the crisp topping. Stir until well mixed.
  8. Spoon the cinnamon apples over the cheesecake batter, then sprinkle the crisp topping evenly over the apples.
  9. Bake for 50–55 minutes until the edges are set but the center has a slight jiggle. Avoid opening the oven during baking.
  10. Cool the cheesecake for 5 minutes, then run a knife around the edge to loosen it. Cool for another hour.
  11. Chill in the refrigerator for at least 6 hours or overnight.
  12. Serve chilled, drizzled with caramel sauce and optionally topped with Cool Whip and apple pie spice.

Notes

Allow cream cheese to soften for easy mixing. Press the crust well for better structure, and ensure to chill the cheesecake for optimal texture.
