Delicious bite-sized apple cheesecake bites with a buttery graham cracker crust, creamy filling, and sweet apple topping.

- 1 cup graham cracker crumbs
- 3 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
- 2 (8-ounce) blocks cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 tablespoon all-purpose flour
- 1 can (about 20 ounces) apple pie filling, chopped
- 1/2 teaspoon ground cinnamon, optional
- Caramel sauce, for drizzling
Instructions
- Preheat your oven to 325°F (160°C). Line a standard muffin tin with cupcake liners.
- Combine the graham cracker crumbs and granulated sugar in a bowl. Pour in the melted butter and stir until evenly coated. Spoon approx. 1 tablespoon into each liner and press firmly. Bake for 5 minutes.
- Place softened cream cheese in a bowl and beat until smooth. Add granulated sugar, vanilla, and flour, then mix until smooth. Add eggs one at a time, mixing gently.
- Spoon the cheesecake filling evenly over the crusts, filling each liner about three-quarters full.
- Bake for 16–18 minutes until centers are set but slightly jiggly. Remove and let cool at room temperature before chilling in the fridge for at least 2 hours.
- Chop the apple pie filling into smaller pieces. If desired, stir in cinnamon.
- Top each cheesecake bite with the apple filling and drizzle with caramel sauce before serving.
Notes
For best texture, use room-temperature cream cheese and don’t overmix the batter. Chill thoroughly for ideal firmness.
