Ingredients

  • 1/2 cup sugar
  • 1 cup heavy cream
  • 3 eggs
  • 1 cup praline paste
  • 1 tsp vanilla extract
  • A pinch of salt
  • Optional: crushed pralines for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, whisk the eggs and sugar until light and fluffy.
  3. Gradually fold in almond flour, vanilla extract, and a pinch of salt.
  4. Pour the mixture into the prepared cake pan and bake for 25-30 minutes.
  5. While the cake is cooling, whip the heavy cream until soft peaks form.
  6. Gently fold the praline paste into the whipped cream until combined.
  7. Once the cake is completely cool, layer the mousse on top of the cake, spreading evenly.
  8. Chill the cake in the refrigerator for at least two hours before serving.
