  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tsp almond extract

  • 1 cup whole milk
  • 1/2 cup sour cream
  • 2 cups unsalted butter, softened (for frosting)
  • 5 cups powdered sugar
  • 3 tbsp heavy cream
  • 1 tsp almond extract (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 2 cups sliced almonds, lightly toasted
  • Fresh strawberries
  • Fresh blueberries
  • Fresh raspberries
  • Powdered sugar for dusting
  • Optional edible gold leaves or mint leaves

Instructions

  1. Preheat your oven to 350°F. Grease and line two 8-inch round cake pans with parchment paper.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Beat butter and sugar in a large mixing bowl until light and fluffy.
  4. Add eggs one at a time, then mix in almond and vanilla extracts.
  5. Alternate adding the dry ingredients with milk and sour cream until the batter becomes smooth and creamy.
  6. Divide the batter evenly between pans and bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake layers to cool completely before frosting.
  8. Beat butter for the frosting until fluffy. Gradually add powdered sugar, heavy cream, almond extract, and vanilla until silky smooth.
  9. Frost the cake evenly around the sides and top with a smooth layer of frosting.
  10. Press toasted sliced almonds all around the sides of the cake for a crunchy finish.
  11. Decorate with fresh strawberries, blueberries, raspberries, and a light dusting of powdered sugar.
  12. Chill slightly before serving for the freshest flavor.
