- ¼ cup sake
- ¼ cup mirin
- ⅔ cup white miso paste
- ⅓ cup sugar
- Scallions and sesame seeds for garnish
Instructions
- In a saucepan, simmer the sake and mirin on medium heat.
- Add the miso paste and sugar, whisking until the sugar dissolves. Let cool.
- Marinate the Black Cod in the mixture, covering and refrigerating for 24-48 hours.
- Preheat your broiler. Wipe off excess marinade and broil the filets for 10-12 minutes, until golden and caramelized.
- Garnish with scallions and sesame seeds before serving.
